Random funny fact. When I posted my blog link to facebook and it asked me to type those two squiggly words in the box to verify whatever, the two words were: "mounting Mitchell."

One day, I will get a job.
My prince already came, so now I need to figure out my career. If you know me, you know I've had about 4,587 career goals since graduating. I strongly believe there are two groups of people who graduate from college: those who go on to real jobs or graduate school, and those who wander around here and there for a while looking for the next step. Guess which group I'm in? Actually, I wouldn't trade it for anything, because I got to meet so many great people in my random jobs AND go to the Dominican Republic. These are things I never would have had the chance to do had I buckled down and become a grownup.
Anyway, I finally decided what to do with myself. I'm going to be a teacher! I know...big surprise. For some reason, I avoided the teaching profession because it seemed cliche. That doesn't make any sense, I know.
I applied to an alternative certification program and was accepted! Hopefully, by the end of the whole process, I will be certified to teach EC-6 bilingual and Spanish to all grades. This means I need to pass my Spanish content exams! Estoy un poco nerviosa. Please be praying for that.
When all is said and done, I should be working on my first-year teaching internship by August! Yipee! Until then, I'm doing some babysitting and such... It's all very exciting. Now, if none of this works out and I fail everything, please don't refer me back to this post where I pronounced to the world (or my 3 readers) my job goals. K thanks!

I put it off forever, but I finally cleaned out the pantry...
You saw it. Since I've lived here, I get uptight every time Dave seems to clunker around the kitchen when he can't find things that I rearranged. The problem is, we have more stuff now, but the same amount of space as before, so obviously, things need to be more efficient. There is no longer room for Dave to have a drawer with measuring cups laid out in a row in order of increasing size.
The pantry was somewhat of a nightmare. Neither of us really knew what was in there because nothing was easily accessible. I finally gathered up the courage to unload it, and this is what happened.
I left our dining room table covered in stuff for 5 or 6 days, and Dave never said a word. Thanks, honey. I found a few interesting things in the pantry, including two cans of olives that seemed to vibrate when I picked them up (I swear, I wouldn't make that up. Olive cans are nasty). I also found this:
Whoops, I can't turn it. Anyway, he has a 60-pack of Swiss Miss hot chocolate packets. And don't be fooled: we also have at least 3 other varieties of hot chocolate at our house. I also found this:
That's about 14 pounds of sugar. I bought a 4-lb bag, then a week later, due to our disorganized pantry, Dave never saw it and put sugar on the grocery list again. I thought that he must be using waaaay too much sugar to already have run out, but didn't want to run into this problem again, so I bought a 10-lb bag! Needless to say, we better be good on the sweeteners for months (or years) to come.
These were awesome. If you can't read the little gold circle is says: Plastic UNBREAKABLE bottles. When Dave got home I said, "Look what I found!" and slammed it into the counter really hard. He totally fell for it and jumped up thinking it would shatter everywhere. He claims he bought these for cooking, but I can never be sure... Sweet kid.
There was definitely one good thing that came out of this pantry cleaning frenzy:
We had enough stuff to make chex mix.

Valentine's Day
Worst blogger ever. Yea, it's hard to put something up here when I don't really feel as though my life is that interesting! Anyway, thought I would show a picture of my Valentine's Day meal that my wonderful husband made. Not only did he make everything, he cleaned everything up! Soooo awesome. So basically, for this holiday I got to be a lazy bum, eat some good food, and drink some good wine. We tried to stick with the same concept as some of our nice meals in Italy, so, voila.
