Recipe Review: Crock Pot Cilantro Lime Chicken

If you know me, you know that I am not a great cook, but I haven't stopped trying.  Dave actually enjoys it more.  That's why he's my weekend chef.  When we first got married, I made it somewhat of a mission of mine to have dinner ready fairly soon after Dave got home from work so he wouldn't get hungry and cranky we could eat a family meal together.  Enter pregnancy.  Dave helped out a LOT there when I was too tired to get a meal going.  Now, with me working in the afternoons until 6:00, our evenings look a little bit different. 

There is one thing that hasn't changed, and it's this: I love my crock pot.  The crock pot allows me to look for the things I value most in a recipe:
  1. Easiness 
  2. Few ingredients
  3. Not having to use 15 different bowls/plates/pans
Anyway, that was a lot of introduction to say I made this: Slow Cooker Cilantro Lime Chicken (allrecipes.com)

Check out the ingredient list: 1 (16 ounce) jar salsa, 1 (1.25 ounce) package dry taco seasoning mix, juice of one lime, fresh cilantro, chicken

Check out the intructions: Cook in crock pot.  Shred.

Amazing.

McCormick seasoning packets are my friends, but you could use real spices if you're a real cook.  I used chicken thighs and fairly cheap salsa (big surprise), but if you use fancy salsa and lean chicken, this is a fairly healthy meal!  Also, I have no pictures, so look at the one on the website, duh.

The verdict?  I liked this meal!  My parents ate it as well and seemed to enjoy it (unless they were just being nice)...We ate it on tacos with black beans, some fresh avocado, and cheese (obviously).  I ate it for a few meals then froze the rest for another day.  I thought this would be a big hit for Dave since the key to his heart is fresh cilantro.  The man loves cilantro.  His verdict? 

"I guess I'm just not that excited about chicken tacos."

Dave: Dallas?

Me: Yes!

Viajito a Austin (a.k.a. Our Vacations Revolve around Food, a.k.a. Myla's First wedding)

Our little family took a trip to Austin this past weekend.  I took a cue from bloggers smarter than I to not advertise when I'm leaving town, because everybody knows there is a lot of awesome stuff to steal in the Richmond-Rosenberg area.

Just to give you a little glimpse into Livingston life, these were all of the snacks packed for one three-hour trip: about 4 bags of those little peanut butter crackers, a bag of trail mix, some beef jerky, a giant can of mixed nuts, three sandwiches, two containers of leftover taco soup, a tupperware of approximately 5 pieces of leftover pizza, and a case of bottled water. For the entire three days for Myla I only had to bring two boobs, some rice, and one tupperware of green beans and cauliflower.


The billboards starting about 70 miles before the actual store had me sold.  Obviously, I decided that we should see what the fuss is all about.  One short hour later, we arrived.  Cue the angels singing.  That place is huge (and a little scary).  Since we were with the kiddo, we tag-teamed going to the restroom and staying at the car with her.  I made the mistake of asking Dave to buy me one piece of fudge while I was in the car feeding the pooper.  The typical Dave-phenomenon occurred where he goes in for one thing and spends 20 bucks.  Dang it, Dave!  Unsurprisingly, $15 dollars of that were for jerky.  The most hilarious part, though, was that I read aloud one of the many Buccee's billboards advertising their "Beaver Nuggets," and said sarcastically, "Oh man, we better get some Beaver nuggets for my uncle Frank."  I forgot that Dave misreads my sarcasm approximately 50% of the time, so out he came out with a bag of the nuggets.  Oh well.  We're on vacation.

We first hit up Chuy's takeout with our gracious host, uncle Frank and dominated some chips and various dips.

The main reason for our trip was to attend the wedding of a friend.  Riley and I both lived/worked in the Dominican Republic for Makarios at the same time.  Because of this, I sometimes refer to him as "the first man I ever lived with." For some reason, Dave doesn't think it's that funny.  Since I'm irresponsible, I took only two pictures at the entire event, and they had nothing to do with the bride and groom at all.  But I'll just fill you in with wedding details: Christ-centered, beautiful bride, beautiful wedding, yummy food, beer, hilarious toasts, etc.

Oh, and some background about a picture I actually did take.  Remember these poopers?
Well now they're HUGE and 5 years old!  They also have no recollection of me, which kind of stinks, but it's ok.  I totally prepared myself for that moment.  Anyway, here they are with their mama showing Myla something she loves-- a technology toy.  I can't decide which thing Myla was more interested in, the boys or the phone.  Oh, and Myla was great at the wedding, except for when she spit up on my foot.  Thank you, Lord.

Saturday morning = Taco Shack.  Enough said.

We went to lunch on Saturday with some friends to Mother's.  Since I know a thing or two about Austin-y food, I checked out the menu before we went, and then I gently broke it to my carnivorous husband that there would be no meat available there.  To make up for it, I picked the most unhealthy item on the menu, the banana-walnut pancakes.  They were awesome.  Dave joked that he didn't have enough facial hair to be eating at that place, because it was full of bearded Austinite men (including the hippie harpist in the corner).  It turned out to be a really fun meal.

After lunch, we picked up muffins at Quack's for breakfast on the next day.  YUM.  I washed down a vegan chocolate muffin with a glass of milk, though.  Is that wrong?

Sunday morning we went to brunch at Threadgill's to visit a friend/extra sister who is the manager.  Shout out to Landry for the giant omelet.  It was a fun visit!  Myla even got an awesome shirt.  Thanks, Shawna D!


All in all, it was a lot of fun.  We ended the weekend still loving each other, so that's a good sign.  I'll close with a few real-life conversations had at some point on the road:

Dave (once we got into the city of Austin): You got us from here, right?  What comes next?
Me: Well, we are either going to turn left or right onto some road that's coming up...  I'll probably recognize it  when I see it.
Dave:  Ok...

Dave: What do you mean you can't read a map? 
Me: What, some people aren't good at reading maps!  I don't read maps, and you don't read books.
(I did end up reading the map).

Dave: Oh great, I'm going to grow a vagina by the end of this trip.

Me: I don't know, check her.
Dave: How?
Me: Just lean back there and sniff her butt!

9 Months (a.k.a. How do I Freeze Time?)

Once again, I have another baby update that is probably only interesting to me.  And possibly to serve as proof to Myla later on in her angry teenage years that I really do love her.

We saw the doc for our "Well baby" checkup, and yippee, no shots this time!  By the way, I definitely recommend my pediatrician, Dr. McDavitt at Grand Parkway Pediatrics for peeps in the Sugar Land area.  Just don't judge her by the ugly tropical-themed carpet in the waiting area.

The stats: 
Height: 27 inches; 25-50th percentile
Weight: 16 pounds, 5 ounces; 10-25th percentile
Head: 17.5 inches; 50-75th percentile

Poor little big-head.  I finally bought some baby cereals to fatten Myla up, since her weight gained seemed to slow down a little. 

Some cute things Myla is doing right now:

  • Saying ma-ma, da-da, ba-ba (but "mama" seems to be the only word with meaning).
  • Crawling, pulling up, starting to scoot
  • When she's sleepy, she sticks her left fingers in her mouth and strokes her hair (or the hair of whoever is holding her) with her right hand.
  • Imitating you when you talk to her
  • The stank face (along with the weird darth vader breathing) Ex:
  • Acting like a mama's girl.  I might actually be the only one who thinks it's cute...
  • Eating lemons like it's nothing.
  • Eating everything else, too.
  • Dancing to music
  • Blowing raspberries
Some less cute things:
  • Throwing fits every time food is finished-- just like her daddy.
  • Occasionally acting like a crazy person when daddy is watching her, thus making him terrified of children...
Things she is still working on:
  • Using a sippy cup
  • Getting little pieces of food into her mouth by herself
  • Standing by herself

It might seem like I've been too busy around the house to blog...

... but the dust bunnies would prove otherwise. 

Things around here are going pretty much the same.  Like everyone else, we are tired of the heat and ready for a long weekend.  And bummer-- I don't even have any white pants to wear before it's too late!

Here goes nothing:

  • The pooper has been more of a puker lately...  She is acting mostly normal, but threw up twice on Wednesday.  I wasn't too worried about it, but decided to go with mild foods for a day or so.  Then, we woke up this morning to find that she had thrown up all over her bed in the middle of the night.  Just call me mother of the year.  My child slept in her puke bed for hours.  I hope she can one day forgive me (although she didn't seem too upset about it to begin with).  I think I am going to break down and buy some baby food rice cereal for the first time ever.  I can't grind rice to be smooth enough...  And I already broke our coffee grinder trying...  Whoops.
  • Here is some more proof that dogs are the best baby entertainers (as if I really needed any):

  • We went for a walk the other day, and this pretty little lady never even ripped off her sunglasses!

     
  •  Dave knows I respond pretty well to post-it notes.  Remember how he left me sweet little notes everywhere on Valentine's Day?  You don't?  Oh well.  Anyway, today he left me this little number on the dishwasher.  Do you think it says anything about my domestic failure skill?
 
  • I feed Myles breakfast #1 in bed because I'm lazy.  Yesterday, she looked like the most hilarious little lounging glutton afterwards:



  • And finally, a glimpse into the beginning stages of (attempted) discipline: Myla is like any child who loves to go straight to the things she is not supposed to touch.  I'll tell this story knowing full well that being on my laptop with my awake child probably wasn't the best idea.  Anyway, it went sort of like this: Myla climbs up to the table and hits the laptop.  I remove her from the area and tell her "no." Same sequence occurs approximately 8 times in one minute.  The next time, I thought I should step it up, so I took her chubby little hand in mine, smacked it, and said "no, Myla" using the toughest mom voice I could muster.  THEN, she looked at me and did this...
